Urad Dal Ki Khasta Kachori

Urad Dal Ki Khasta Kachori






Ingredients:

For dough
Refined flour (Maida): 1 Cup
Wheat flour: 1/4 Cup
Semolina: 1/4 Cop
Cooking Oil: 2 tbsp

For Filling:
Skinned black gram (Dhuli Urad ki dal): 1 Cup
Yellow Mong Dal: 1/2 Cup
Red chili Powder: 1 tsp
Coriander seeds crushed coarsely: 1 tbsp
Dry mango (amchur) powder: 1 tsp
Chaat Masala: a Pinch
Garam masala powder: 1 tsp
Asafetida: a pinch
Cumin Seeds: 1/2 tsp
Salt to taste

For Frying: Cooking oil to deep fry

Method:
  • Mix the Maida, Semolina,Wheat flour and salt in mixing bowl. Add oil, rub until fully incorporated and the mixture resembles coarse breadcrumbs. Add warm water; knead to make smooth and pliable dough. Cover with moist napkin and keep aside for one hour.
  • Soak both the Dal in water for three to four hours. Put soaked moistened Dal in a blender & Grind it coarsely. It Note: It should be grainy & not a fine paste.
  • Heat 2 tbsp oil in a non-stick pan. Add Asafetida
  • Add Cumin Seeds and roughly crushed coriander Seeds & fry for a minute.
  • Add the coarsely ground dal and sauté over medium heat to get rid of moisture. When the mixture starts drying out add all other ingredients to be added in the stuffing. The stuffing should be damp and not wet. Switch off the gas and keep aside to cool.

  • Make equal sized small balls of dough. Roll out the balls to approximately three to four inches in diameter. Put about 1 tbsp of stuffing in the center. Seal the edges together using a little water and roll into a round ball. Press down the ball making it flatter. Roll it lightly, slightly thicker than puri with the help of oil or dry flour.
  • Heat the oil in a wok (kadhai); deep-fry the stuffed kachoris, a few at a time, on medium heat till they puff up and become crisp and golden.
  • Remove and drain the excess oil on absorbent kitchen paper towels.
  • Serve hot with Aloo Ki Sabji and pickle.

RAJ KACHORI CHAAT



This is the most famous street Food in Rajasthan. This stomach filling and delicious chaat. These are big sized crisp Puris and are filled with number of Stuffing and Chutneys. I thought of preparing this as our Sunday Evening Snack. I still remember when i had this chaat years back. It was my eldest sister engagement  Ceremony and my sister friends and Aunties have prepared for breakfast as the engagement Ceremony was at my Sweet home. During that time i was small studying in class 8 and after that I had this several time. But the when i had this for the first time i didn't like that much because it was too heavy. But I have never tried anywhere thinking its very difficult and lengthy process to prepare this. Suddenly once i was suffering the Net and came across this delicious Chat. I have read the recipes contributed by "Show me the Curry","Sanjeev Kapoor","Tarla Dalal","Mharo Rajasthan Recipes" and thought its not very difficult and thus made my own version for this spicy chaat bowl filled with delicious condiments which has refreshing flavors and makes for a unique food experience.

INGREDIENTS:

For the Kachori Dough:

Semolina/Sooji: 1 Cup
Refined Flour/Maida: 5 tbsp
Salt:1/2 tsp (or to taste)
Warm Water: for kneading the dough
Oil:for deep frying: (1 tbsp for applying in dough)

For Filling the Chaat:

Prepared Kachori
Potatoes:2 (Boiled,Peeled and cut into cubes)
Moong Sprouts: 1/2 Cup (Boil them in a open pan for 5 minutes)
Chickpeas (Kabuli Chana): 1/2 Cup (Soaked overnight and boiled)
Dahi Vada: 2 (slightly mashed)
Whipped Yoghrut:1/2 Cup
Sweet Chutney: to taste
Coriander or Green Chutney: to taste
Sev: 3-4 tbsp (Any sev of your choice)
Red Chilly Powder: 1 tsp
Roasted Cumin Powder: 1 tsp
Chaat Masala:1/2 tsp
Coriander Leaves: for garnishing
Black Salt: 1/2 tsp
Green chilies/2 tsp (finely chopped)
Onion : 1/2 cup (optional,finely chopped)
Papadi:2-3 (Soaked in curd with 1 tsp of Sugar)

How to Procedure


  1. For the kachoris, mix all the ingredients with warm water except oil and make a stiff and hard dough. Apply 1 tbsp of oil on the top of dough and kept is covered for an hour time.
  2. After an hour time roll them into small pooris of 4-5 inches diameter and deep fry them in hot oil on medium flame till well and the kachoris are crisp and golden brown in color from both sides.
  3. Ensure that these kachoris are not soft,if they are fry them once again. Allow them to cool down.
  4. Take one kachoris in a serving plate and make a big hole in the center and fill the Kachori with cubed potatoes, kabuli chana,sprourted moong,mashed Dahi Vada  Sprinkle roasted cumin powder,red chilly powder, black salt,onion,tamarind chutney,coriander chutney,curd,sev and coriander leaves.
  5. Serve immediately before it becomes soggy.


NOTE: I have sorted kabuli chana and moong sprouts in 1 tbsp of oil but it is optional. You can do without this also.

PANCHMEL DAL

PANCHMEL DAL


PANCHMEL Dal is nothing but 5 Lentis Dal and goes with  Chapatis , batis or even simple cooked rice

Ingredients:

Toor Dal: 1/4 Cup
Moong Dal:1/4 Cup
Chana Dal:1/4 Cup
Split Urad Dal:1/4 Cup
Masoor Dal: 1/4 Cup
Tomatoes:1 (Medium finely Chopped)
Turmeric Powder: 1 tsp
Coriander Powder: 1 tsp
Cumin Powder: 1 tsp
Red Chilly Powder: 1 tsp
Garam Masala: 1/2 tsp
Salt: to taste
Ghee: 1 tsp

For Tadka:
Mustard Seeds: 1/2 tsp
Cumin Seeds: 1/2 tsp
Split Green chilies: 1
Dry Red Chily:1
Ginger Garlic Paste: 1 tsp
Onion:1 (Large finely chopped)
Asofetida (hing): a pinch (optional)
Ghee : 2 tbsp

Method:

  • Clean and was the dal and soak all the Dals for 15 minutes. Drain the water from soaked dals
  • Take a Pressure cooker add dals and 3 cups of water..
  • To this add turmeric Powder,Red Chilly Powder,coriander Powder,cumin Powder,Salt and 1 tsp of Ghee.
  • Cover the Lid of the cooker and allow it to cook for 15-20 minutes.(After 2 whistle reduce the flame of the gas stove and allow it to cook it for 15 minutes.

For Tempering:
  • Heat oil in a pan. Add mustard Seeds,Cumin Seeds.
  • When the seed began to sizzle add onions, split green chilies ,red chilies and ginger garlic paste and saute it for a minute.
  • Add Cooked Dal and salt to taste. If the Dal is thick adjust it with 1/2 cup of water. 
  • Mix all the ingredients and cover the pan with a lid and cook on a medium heat for 5-8 minutes.
  • Sprinkle coriander Leaves over the top of the Dal.
  • Serve hot with Chapati,Jeera Rice or even with Rajasthani Baati.

BAFLA BATI

BAFLA BATI



Ingredients:

For Bati:

Wheat Flour: 2 Cups
Ghee: 1 Cup
Asofetdia: a pinch (Hing)
Saunf: 1/2 tsp
Salt: to taste
Baking Powder: 1/4 tsp
Cumin Seeds: 1/2 tsp
Oil: for deep Frying batis

For Dal
Arhar dal: 1/2 cup
Chana dal:1/2 cup
Moong Dal: 1 cup
Jeera:1 tsp
Onions, chopped finely : 1cup
Tomatoes, chopped finely : 3/4th cup
Ginger-garlic paste : 1 tsp
Garam Masala powder : 2 tsp
Red Chilly powder : 2 tsp
Turmeric powder : 1 tsp
Green chilies, finally chopped: 2 tsp
Coriander leaves, chopped finely : ½ cup
Ghee : 4 tsp · Oil
Salt to taste


  
Method:


  • Take wheat flour in a thali.

  • Add 1/2 cup Ghee, salt, Cumin seeds, hing,baking Powder and saunf. Mix it well and keep it aside for 10 minutes.

  • Make tight dough by water.Cover the dough with a wet muslin cloth.

  • Divide the dough into equal small portion.

  • Take one portion on your palm and add a drop of ghee in the center and turn it to a ball.

  • Make the all other balls in simiar way and keep it aside.

  • Boil water in a large vessel or cooker. Add salt and Oil. When water stars boiling add all the batis

  • Steam the baatias for 15-20 minutes.

  • Remove the batis from the cooker and allow it to cool down.

  • Heat oil in a kadhai and deep fry these Baatis in oil till they became golden brown.

  • Serve hot with dal

 Method For Dal
  •  Soak the three dal for 2 hours seperately.
  • Take dal in pressure cooker; add water, turmeric powder and salt.
  • Pressures cook the dal till it becomes soft.
  • In a blender take tomato, green chilies, ginger and blend it to a fine puree.
  • Heat 4 tbsp oil. Add Jeera, onions. Brown them.
  • Add ginger-garlic paste and tomatoes puree.
  • Fry and add all the masalas, beans salt. Simmer till well blended. The gravy should be thick.
  • Add cooked dal and mix it well and allow it to simmer for few more minutes.
  • Your dal is ready.
  • Garnish it with coriander leaves.
  • Dip hot fried baatis in the dal while eating.
  • Pur melted ghee over the dal and batis

RAJASTHANI THALI RECIPES

RAJASTHANI THALI
I.Shahi Gatte Curry Ingredients: For Gatte: Besan / Gram flour – ½ cupChili powder - 1/2 tsp Turmeric powder: ½ tspCoriander powder - 1/2 tsp Cumin seeds: ½ tsp Water: 2 cupsGhee - 1 tspSalt to taste For the curry: Curds / Yogurt – 5-6 tsp Onion: 1 (finely chopped) Ginger-garlic paste: ½ tsp Tomato: 1(finely chopped) Cumin seeds: 1tsp Ajwin: ½ tsp Asafoetida: ½ tsp Chilli powder - 3/4 tsp Coriander powder - 3/4 tspTurmeric Powder ½ tspOil: 1tsp & for fryingSalt to taste METHOD: For the gattas: Mix Besan with chilli powder, coriander powder, turmeric powder, oil and salt. Add water to get smooth batter.The batter should look like: Heat 1 tsp oil in a pan, add cumin seeds, Ajwin, asfotedia.Once start crackling add the batter of Besan Stir continuously till the batter becomes thick and no lumps are found. Grease a thali with oil add the Besan which we have thickened. Allow it to cool for 15 minutes Cut it into the desired shape. Deep fry these gattas. Your gattas are ready.
For the Curry: Strain the curd through a strainer. Add salt, chili powder, coriander powder and turmeric powder. Stir it well. Heat oil in a kadhai. Put cumin, green chillies. Once start crackling add onions and ginger garlic paste When onion becomes transparent add tomatoes and cook till the tomatoes are done. To this add the curd mixture. And stir continuously. Add water and allow it to boil and cook it for 5 minutes while stirring continuously. Add the gattas Simmer the flame and cook for another 5-7 minutes. Turn off the gas.
Your sahi besan gatta is ready.
II. PAPAD KI SABJI Ingredients: Papads: 3-4 Ghee: 1 tsp Small onion - 2 (finely chopped) Green chillies: 2-3 Mustard seeds - 1/4 tsp Cumin seeds - 1/4 tsp Asafoetida powder - 1/4 tsp Chilli powder - 1/4 tsp Turmeric powder - 1/4 tsp Sattu: 4 tsp Ghee - 1 tsp Water - 1/2 cup Salt - as required Coriander leaves - for garnishing Method: Heat ghee in a pan, add mustard seeds and when it splutters add cumin and asafoetida powder. Add onions and fry until light brown. Add chilli powder, turmeric powder and salt. Dissolve Sattu in 1 cup of water and add it to the kadhai and bring it to boil. Break the fried (deep fried in oil) or toasted papads into small pieces. Add to the water and boil for 5 more minutes. Garnish it with the coriander leaves
III.GATTE KA PULAO Ingredients: For gatte: Besan – ½ cup Red Chilli powder – ½ tsp Turmeric Powder: ½ tsp Cumin seeds – ½ tsp Ajwin- ½ tsp Curd - 1 tbsp Salt - as required Asafoetida - 1/4 tsp Oil - for frying For Pulao: Rice - 1 cup Onion – 1 sliced Cardamom - 2 crushed Cloves - 2 crushed Cashews - few Sugar: 1 tsp Bay leaf: 1 Keasr: 3-4 strings (dissolved in Milk) Cumin seeds - 1/2 tsp Asafoetida - 1/4 tsp Chilli powder - 1/2 tsp Turmeric powder - 1/2 tsp Garam masala - 1/2 tsp Garlic, Green chilli, Ginger paste - 1 tsp Oil - 1 tbsp Ghee - 1 tsp METHOD: For Gattas: Boil water in a large pan. Add 1 tsp oil and salt. Mix all the ingredients together and by adding very little water, make stiff dough. Divide the dough into equal portions. Shape into a thin cylinder. Drop into the boiling water and cook for about 15 minutes. Drain and let it cool. Once cooled, cut into small bits and deep fry in oil.
For Pulao: Cook rice with right amount of water. Let it cool. Heat ghee in a kadhai; add cardamom, cloves, cashews, bay leaf and cumin. When it turns light brown, add the sugar When sugar gets dissolved in oil add the onion and the chilli-ginger-garlic paste and saute for 5 minutes. Add the asafoetida, chilli powder, and turmeric powder and Garam masala. Saute for a while. Add the gattas and salt. Mix well. Add cooked rice and cook it for 4 minutes. Add kesar dissolved in milk. Cook it covered for 2-3 minutes. Your gatte ka Pulao is ready.
IV. MISSI ROTI
Ingredients: Wheat flour (Atta) – ½ cup Besan (Gram flour)- 1 cup Onion: 1 (small, finely chopped) Green Chillies: 2-3 (finely chopped) Coriander Leaves: 3-4 table spoon (finely chopped) Turmeric Powder: ½ tsp Red chilli powder – ½ tsp Coriander powder – ½ tsp Chat Masala: ½ tsp Salt - as required Ghee - for brushing Ghee - 3 tsp Oil: to roast Butter: as required Method: Combine all the ingredients except ghee in a bowl. Make into stiff & soft dough by adding little water. Once the dough is done let it rest for 15 minutes. Divide the dough into equal portions and form them into evenly sized balls. Grease the tabletop and keep dough on it. Press a little bit. Roll it into small and thick rotis of six inches diameter. Heat a tava, add the rotis and cook on both sides. Brush little ghee on the rotis. Once cooked on both sides, place it on the serving plate, apply little butter. Serve hot.

DAL BATI

DAL BATI
Ingredients for Bati

Whole wheat flour: 2 cups
Semolina (Sooji):1/2 cup
Ghee, melted : ½ cup
Jeera:1/2 tsp
Ajwin:1/2 tsp
Baking Powder: a pinch
Salt to taste
Water for Kneading

Ingredients for Dal

Arhar dal: 1/2 cup
Chana dal:1/2 cup
Moong Dal: 1 cup
Jeera:1 tsp
Onions, chopped finely : 1cup
Tomatoes, chopped finely : 3/4th cup
Ginger-garlic paste : 1 tsp
Garam Masala powder : 2 tsp
Red Chilly powder : 2 tsp
Turmeric powder : 1 tsp
Green chilies, finally chopped: 2 tsp
Coriander leaves, chopped finely : ½ cup
Ghee : 4 tsp · Oil
Salt to taste

METHOD

  • Knead a soft dough with flour, semolina, ghee, Ajwin, Jeera, baking powder salt and just enough water
  • Roll into lemon-sized balls. Cover and keep for 15 minute.
  • Heat the electronic tandoor for 5 min
  • Now roast these baatis in batches in tandoor till puffed and golden outside and spongy inside for 15-20 min. keep hot.
  • Arrange the baatis on a serving plate break and pour melted ghee on the baatis
