INDIAN DRY MASALA

Hello friends this time i am contributing the simple dry masala which we use daily in our daily meals. Hope you will all like this. This time i am giving you the how to make GARAM MASALA, BIRYANI MASALA, KALOUNGI MASALA at home.


1) GARAM MASALA POWDER


As we all know Garam Masala is a basic blend of spices used in India to flavour the various recipes.


Ingredients


Cloves: 15


Cinnamon sticks: 10


Black Cardamom: 10


Green Cardamom: 20


Cumin seeds: 2 tsp


Bay leaf: 2


Coriander seeds: 2 tsp


Peppercorns: 10


Method




Roast each of the above till they turn aromatic.


• Powder to a fine powder using a grinder when it cool down.


• Keep them in a airtight container.


• You can make a larger or a smaller quantity of this by using the above ingredients in the same ratio.




2) KALOUNGI MASALA






This Kalongi Masala can be used in any dry recipes like boiled Potato bhujia, bhindi bhujia, or stuffed vegetable like stuffed bhindi, stuffed karela


Ingredients




Coriander Seeds (Dhaniya): 2 tbsp


Cumin Seeds (Zeera): 1 tbsp


Fenugreek seeds (Methi Seeds): 1tbsp


Carom seeds (Ajwin): 1/2 tsp


Magrala: 1/2 tbsp


Saunf (Fennel Seeds): 1 tbsp




Method


• Roast each of the above till they turn aromatic.


• Powder to a fine powder using a grinder when it cool down.


• Keep them in a airtight container.


You can make a larger or a smaller quantity of this by using the above ingredients in the same ratio.


3) BIRYANI MASALA


This can be used while you make any kind of biryani like Chicken Biryani,Egg Biryani,Vegetable biryani


Ingredients:


Cloves: 20
Green Cardamom:8
Black cardamom: 3
Cinnamon Sticks:1"
Nutmeg:1 tsp
Star Anis:4
Fennel seeds: 4 tbsp
Bay Leaves: 8
Cumin Seeds: 3 tbsp
Poppy Seeds: 2 tbsp


Method:



  • Roast all the ingredients in a pan and allow them to cool.
  • Grind them into a fine Powder and keep it in a air tight Container





4) GUN POWDER MASALA


This is a special type of masala which can be used in raita or can be sprinkle onto your favouriate Salad


Ingredients:


Coriander Seeds: 30 gms
Toor Dal: 20 Grams
Black Pepper: 5 grams
Hing: 2 grams
Cumin seeds: 5 grams
Chana Dal: 20 gms
Dry Red chillies: 5 Gram
Black Salt: 5 gms
Chat masala: a pinch
Salt: to taste


Method:



  • Roast all the ingredients except Hing, salt, black salt and chat masala.
  • Roast them to fine powder. 
  • Mix all the ingredients and keep them in a air tight container
  • This powder can be kept for atleast 1 week.



5) Pav Bhaji Masala


This can be used while you are making your favorite Pav bhaji or missal pav.


Ingredients:


Coriander Seeds: 2 tbsp
Cumin Seeds: 1 tbsp
Dry red chillies:3-4
Turmeric Powder:1/2 tsp
Dry Mango Powder(Amoochar Powder): 1 tbsp
Green Cardamom: 2
Cloves:5-6
Black Pepper: 2-3
Cinnamon Sticks: 1"
Sounth Powder (Dry Ginger Powder)::1/2 tsp
Hing:1/2 tsp
Garam Masala: 1tsp
Channa Dal: 1 tsp
Salt: 1tsp


Method:



  • In a kadhai dry roast  hing, chana dal, coriander seeds, cumin seeds, green cardamom, cloves,black pepper, cinammon sticks. 
  • When aroma of the all the dry masala start coming switch of the gas and add all the left over ingredients like turmeric powder, garam masala, dry mango powder,dry ginger powder and salt. 
  • Keep them aside and allow it to cool by itself.
  • Once they cool down grind them into a fine powder and keep it in a air tight container.
